I just made this for about the 4th or 5th time. It is wonderful, easy, quick, and can be made with Splenda white and brown sugars. Most of all it is yummy!
BLUEBERRY CRISP
4 cups blueberries, washed, fresh or frozen (do not have to be thawed if frozen) – remove any berries that are not up to snuff. Be sure to remove any stems.
2 cups all purpose flour
¾ cups white sugar
¾ cups brown sugar
1 tsp. cinnamon
1 tsp. vanilla
1 cup mayonnaise
2 tblsp. melted butter
Directions:
1. Preheat oven to 350 degrees F (175 degrees C)
2. Place the blueberries into a 9” x 13” baking dish and drizzle in vanilla (mix lightly). In a medium bowl, stir together the flour, sugars and cinnamon. Stir in the mayonnaise and melted butter until the mixture resembles course crumbs. Sprinkle over the top of the berries.
3. Bake for 35 to 40 minutes in the preheated oven until the top is lightly browned.
Tips:
Lightly coat pan with Pam or cooking spray.
Use a pastry cutter or hands to mix topping.
You can add more berries if you like, or use different fruits, like apples, peaches, etc.
